Lobster Quality & Protein Testing

Scientific Methods for Ensuring Premium Live Lobster Quality

Our rigorous protein testing protocols ensure that every lobster meets the highest standards for vitality, strength, and shipping readiness.

1

Hemolymph Protein Assessment

Lobster hemolymph (blood) protein levels are a key indicator of health and vitality. We measure total protein concentration using refractometry, with optimal levels between 4-6 g/dL indicating a well-nourished, stress-resistant specimen ready for international transport.

2

Vigor Testing Protocol

Each lobster undergoes standardized vigor testing including tail reflex response, claw strength assessment, and leg movement coordination. Only specimens scoring "Grade A" on our vigor scale are approved for live export.

3

Shell Hardness Evaluation

Post-molt lobsters with soft shells are not suitable for shipping. We use durometer testing to ensure shell hardness meets transport standards, typically requiring a minimum 60 Shore A reading.

4

Stress Response Monitoring

Lobsters are monitored for stress indicators including antenna activity, coloration changes, and respiratory rate. Specimens showing stress responses are held for recovery before export consideration.

Why North Atlantic Lobster?

The cold waters of the North Atlantic, particularly around Nova Scotia, Canada, produce lobsters with exceptional quality characteristics that set them apart from warmer water varieties.

  • Cold water temperatures (2-10°C) result in slower growth and denser, sweeter meat
  • Rich in omega-3 fatty acids due to natural diet of cold-water crustaceans and fish
  • Harder shells from cold water environments make them ideal for live transport
  • Clean, unpolluted waters ensure minimal contaminant levels
  • Sustainable fishery management ensures long-term population health
